Jalapeno Mac & Cheese

JalapenoMacIt doesn’t get much more comfort food than mac and cheese. But as with most comfort foods, that means hulk sized portions and lots and lots of excess calories. I don’t know about you but I don’t want a measly portion of mac and cheese. So, I splurge on the real deal occasionally and for most other times, I look to this recipe.

Now I know most recipes are cheddar based, and if you prefer that style of mac, you may want to check out this easy cauli mac and cheese recipe. I like to switch things up and make a white sauce like the one used here. You could easily swap the mozzarella for a cheddar or colby jack if you want. If you don’t like spice, feel free to leave out the jalapeno or only use half of one. That’s one of the best things about cooking. Tailor it to YOUR needs!

By the way, this stuff freezes pretty amazingly. Portion into individual containers and pop in the freezer. Defrost in the fridge or in the microwave and heat as you would normally. You can also toss in some grilled chicken or tempeh for a well rounded meal you can enjoy throughout the week.
