Leftover Turkey “Crock”-Pot Pie

turkey-pot-pieGot leftover turkey from Thanksgiving that you don’t know what to do with? Or perhaps you made too much chicken and want something else besides sandwiches? This recipe is perfect to use up those leftovers. And bonus (see notes): you can freeze the cooked meal in single serve containers for 3-4 months.

The recipe is simple and requires just a few ingredients. Throw it all into your crockpot and you’ve got a healthy “deconstructed” pot pie. Yum!

  • Notes: To freeze, let the mixture cool completely then divide into single serve airtight containers and place in freezer for up to 3-4 months. To reheat, simply thaw in fridge night before or defrost in your microwave for 15 minutes and then reheat normally.
