Cheesecake Bark

cheesecake barkThere are lots of recipes floating around with “yogurt bark”. If you haven’t seen them, you essentially take yogurt + add-ins (fruit, nuts, chocolate), freeze it in a thin layer and break it into pieces (=bark).

I’ve tried it and it’s delicious. But, I thought to myself, maybe there’s a way to do it better. Enter: cream cheese. Still high in protein but less tangy and a lot creamier, it seemed the perfect solution. And it was!

Feel free to add what ever fruit is in season or even experiment with nuts/seeds or even chocolate! Here’s a few ideas for you… 

  • The Lux: pomegranate seeds + pistachios + dark chocolate chips
  • PB&J: strawberries + peanuts + cheerios
  • Pure Decadence: bananas + hazelnuts + 1-2T nutella
  • Raz-ma-tazz: raspberries + almonds + white chocolate chips
  • The Festive: cherries + dried cranberries + pumpkin seeds
