Healthy Pumpkin Pie Crisp

healthy pumpkin pie crispDid you know pumpkin pie is actually one of the few desserts that is lower in calories even when it’s made the traditional way? It’s sort of the angel food cake of pies. Not to mention, you’re getting a serving of vegetables too (sorry carrot cake). And I love me some pumpkin pie. It doesn’t matter how much I’ve eaten on Thanksgiving. There is always room for pie.

One year, my mom decided to make a new version. She calls it “crunchy pumpkin pie”. It’s basically all the wonderful things about pumpkin pie + a crunchy topping like you’d find in a fruit crisp. You know the kind– sugary buttery oat-y goodness.

It is now hands down my favorite dessert. Ever.
