Vegan “Honey”

Vegan Honey 2September is National Honey Month. Naturally, I wanted to buy some good quality honey to feature a great recipe. In my search, I came across an interesting product I had never seen before– vegan honey. Many vegans avoid honey for various reasons. But, that isn’t what this post is about.

What it is about is this cool product I found and my attempt to re-create it, albeit a bit healthier. What’s the secret ingredient? Apple juice.

While this isn’t quite honey, it’s definitely a sweet and delicious alternative. And by making it yourself, you get two options – full sugar or low sugar, to suit your needs. I find this works best with things that just need a little sweetness – yogurt, oatmeal, smoothies.  I haven’t attempted to use it in baked goods, so try at your own risk!  It is less sticky and viscous, with a bit of a tang. I think you’ll find it surprisingly delightful and reminiscent of honey in an interesting and peculiar way.

  • Substitutions: You can use any honey-flavored tea you’d like. It is optional but I found it adds a nice floral flavor similar to real honey that you can’t get from the apple juice alone.

  • Notes: Erythritol may crystallize upon refrigeration. Simply heat up the mixture slightly and stir well to dissolve back into the syrup.
  • Substitutions: You can use any honey-flavored tea you’d like. It is optional but I found it adds a nice floral flavor similar to real honey that you can’t get from the apple juice alone. You may try substituting the erythritol+stevia blend with a granulated sweetener (like the baking blends you find in the baking aisle) but I cannot guarantee it will work well.
